Sweet Maui Onion Walleye

A lake-day classic. Sweet Maui Onion Kettle Chips make a coating that tastes like the Great Lakes met Maui at a backyard fish fry. Walleye stays flaky inside, crust stays crispy outside.

Sweet Maui Onion Walleye

Ingredients

4 walleye fillets (6 oz each)
2 bags (2.5 oz) Better Made Sweet Maui Onion Kettle Chips, crushed fine
1/2 cup all-purpose flour
2 large eggs, beaten
1/2 tsp salt
1/2 tsp black pepper
Better Made Sour Cream & Onion Seasoning Shaker, light dust before cooking
3 tbsp vegetable oil
Lemon wedges, for serving

Instructions

Pat the walleye dry. Season lightly with salt, pepper, and a single light dust of Sour Cream & Onion.
Crush the kettle chips inside the bag until they look like coarse breadcrumbs.
Set up three bowls: flour, beaten eggs, crushed chips.
Dip each fillet in flour, then egg, then press firmly into the chips.
Heat the oil in a nonstick skillet over medium heat.
Cook the fillets 3 to 4 minutes per side until the crust is golden and the fish flakes easily.
Serve with lemon wedges and a side of fresh slaw.
BETTER MADE TIP

Walleye is delicate, so the crust does the talking. Crush the kettle chips finer than you would for chicken so the coating adheres.
